Fish at night in calm sea with menaica nets, pull nets by hand, remove each anchovy delicately, eliminate head and entrails, hold in wooden boxes without ice, wash in brine at dawn, arrange in small terracotta jars or old terzarole barrels, cover, press with stones and age at least six months.
