What it is
A traditional Campanian coastal antipasto of cleaned anchovies marinated with vinegar, lemon and salt, then finished with oil and chilli.
Origin place card
Coastal areas of Naples and Salerno; restaurants, botteghe and fishing towns.
Verified history
The official page calls it an ancient recipe for a privileged fish of the Campanian coast and places it in restaurants and local shops across coastal Campania. Treat this as source-supported tradition/history from Regione Campania — Alici marinate; The current evidence does not independently establish a founder, precise origin date, first attestation, monastery, saint, or archival origin story.
Local hypothesis
This page is about immediacy rather than long conservation: the same anchovy culture that salts fish for months also makes a sharp one-day antipasto. Source-supported detail: An ancient recipe to prepare anchovies, a high quality fish that can be found around Naples and Salerno's coast, is the anchovies marinate.
Local legend / oral tradition
No legend documented; fieldwork should gather local acid choices and serving habits.
Ingredients
Secondo la ricetta tradizionale le alici, pulite della testa, delle interiora e della lisca, devono essere sciacquate, asciugate in ceste di plastica per circa 2 o 3 ore e condite con aceto, limone e sale.
Method
Clean anchovies of head, entrails and bone; rinse, dry in baskets for two to three hours, season with vinegar, lemon and salt, rest one day, drain thoroughly, then finish with oil and chilli. Add food-safety caution for raw/acid-marinated fish.
Why travel for it
A seaside antipasto page for Campania restaurants: one plate, a view of the harbour, and the fish still in memory.
Recreate-it pathway
Do not publish without food-safety review for raw marinated fish; modern parasite-control guidance is required.
Editorial warning
Regione Campania product sheet is descriptive/divulgative; do not publish as a final tested recipe, legal specification, hygiene protocol, or preservation protocol. Keep quantities, temperatures, maturation times, and safety steps source-bound and send any consumer-facing recipe to test kitchen / food-safety review.
Fieldwork questions
Ask coastal restaurants about vinegar/lemon ratios and whether fish is frozen for safety before marinating.
