In short
Piedmont, at the foot of the Alps, is a region of refined, sometimes courtly cooking. Its hills give truffles, hazelnuts and great wines; its plains give rice and butter-rich dishes.
The landscape
Alpine valleys, the rolling Langhe and Monferrato wine hills, and rice paddies on the eastern plain. French-Savoyard and aristocratic influences left a mark on the table.
